Ingredients
Blueberry pancakes:
1 egg
1 teaspoon vanilla extract
1 ¾ cups almond milk
1 cup blueberries
½ cup buckwheat flour
2 tablespoons coconut flour
1 teaspoon bi-carb soda
1 teaspoon cinnamon
Pinch Himalayan rock salt (or sea salt)
Coconut oil (for frying)
Tahini drizzle:
½ cup tahini
¼ cup Coconut oil (melted)
1 tablespoon pepita seeds
1 tablespoon rice malt syrup
Method
- Combine dry ingredients in a mixing bowl.
- Whisk egg, milk and vanilla extract in a separate mixing bowl.
- Add ½ cup blueberries then add to dry mixture and combine all ingredients.
- Cook pancakes in frying pan over medium heat until golden brown on both sides.
- Combine tahini drizzle ingredients and serve with pancakes and remaining blueberries.
Makes approximately 6-8 medium pancakes.
