Gluten-free, dairy-free, sugar-free blueberry pancakes

Looking for a delicious start to the weekend? Try these super healthy pancakes that will fool even the most unhealthy of friends/spouses/partners/flatmates/children/those people in your life who are trying to get you off the wagon!

Ingredients

Blueberry pancakes:

1 egg
1 teaspoon vanilla extract
1 ¾ cups almond milk
1 cup blueberries
½ cup buckwheat flour
2 tablespoons coconut flour
1 teaspoon bi-carb soda
1 teaspoon cinnamon
Pinch Himalayan rock salt (or sea salt)
Coconut oil (for frying)

Tahini drizzle:

½ cup tahini
¼ cup Coconut oil (melted)
1 tablespoon pepita seeds
1 tablespoon rice malt syrup

Method

  1. Combine dry ingredients in a mixing bowl.
  2. Whisk egg, milk and vanilla extract in a separate mixing bowl.
  3. Add ½ cup blueberries then add to dry mixture and combine all ingredients.
  4. Cook pancakes in frying pan over medium heat until golden brown on both sides.
  5. Combine tahini drizzle ingredients and serve with pancakes and remaining blueberries.

Makes approximately 6-8 medium pancakes.
